From Italy to Canada
Pizzaiolo was born in 2005 from a simple idea: to bring authentic Italian pizza to Canada. Our founder, Marco Rossi, trained in Naples with master pizzaiolos before bringing his passion and expertise across the Atlantic.
What began as a single location in Toronto has grown into a beloved brand with multiple locations across Canada, but our commitment to quality and tradition remains unchanged.
Every Pizzaiolo location adheres to the same principles: handcrafted dough that's never frozen, naturally leavened through a 72-hour fermentation process, and topped with only the finest ingredients.

The Pizzaiolo Difference
What sets our pizza apart begins with our dough. Unlike many pizzerias that use commercial yeast for quick rises, we employ a slow fermentation process that develops complex flavors and improves digestibility.
Our commitment to authenticity extends to our cooking methods. We use specially designed ovens that reach the high temperatures necessary to create that perfect balance of crisp exterior and tender interior that defines great pizza.
While we honor tradition, we also embrace innovation, offering a variety of styles from classic Neapolitan to Roman thin-crust and creative seasonal specials that showcase the best local ingredients.
